Gastros was founded by two chefs who believed in doing things the right way — no shortcuts, no compromises.

For over a decade, Owen and Travis have crafted small-batch salami by hand in a USDA-inspected facility, using 100% heritage Berkshire pork from small American farms. Six weeks of natural dry-curing, no GMOs, no antibiotics, no fillers.

So far, so good. At close to $30/LB, not something I would purchase on a regular basis. My local Grocer has gourmet hard salami for 1/2 that price. I will buy it to have for special gatherings with friends.

Each stick is 5 oz — the traditional artisan size — and makes about 5 servings. During our six-week dry-curing process, salami naturally loses 30–40% of its original weight as moisture evaporates. What’s left is concentrated flavor, richness, and texture packed into every 5 oz stick.

Why is your salami more expensive than store-bought?

Great question. Here’s how we compare:

Do you use any fillers or preservatives?

Where do you source your pork?

We partner directly with HeritageBerkshire.com and small American family farms. Every pig is raised without antibiotics, growth hormones, or GMOs — only heritage genetics and humane practices.

Is your product organic?

While we aren’t certified organic, our farms meet or exceed organic standards:

  • No GMOs
  • No pesticides or herbicides
  • No antibiotics or growth hormones

Organic certification is often out of reach for small farms, but we hold our sourcing to higher standards.

Do I need to remove the casing?

Nope! Unlike most salami, our natural casing is removed after the six-week curing process, before packaging. That means all you have to do is slice and enjoy — no peeling, no waste, just ready-to-eat artisanal salami.

Why does the size, look, or texture vary slightly?

This is the beauty of small-batch, artisanal salami. Each batch is handmade, air-dried, and crafted without industrial shortcuts. Variation in texture or appearance is part of the authenticity — and what makes it better than “cookie-cutter” factory salami.

How quickly can I get my order?

Orders ship via USPS within 2–3 business days. You’ll get a tracking link as soon as it’s on the way.

How long does it last? Does it need refrigeration?

Unopened, our salami is shelf-stable for up to 12 months. Once opened, we recommend refrigerating and consuming within 7–10 days. Perfect for gifting, travel, or boards.

Is this good for charcuterie boards or gifting?
