How it's made

That white coating is the traditional cure mold — a beneficial culture that's been part of dry-curing for centuries. As the salami ages, it forms an even layer across the casing, slowing how fast moisture leaves so the meat dries evenly, and crowding out what you don't want near curing meat. Same idea as the rind on a good wheel of cheese.

Our cure comes from celery powder. Celery contains naturally occurring nitrates — the same compounds that have preserved meat for centuries, just from a vegetable instead of a lab. That's why the label reads "no nitrate or nitrite added except for that naturally occurring." Same cure. No synthetic chemistry.
