What makes Gastros salami different?

Gastros salami is crafted in small batches using traditional fermentation and dry-curing methods that take weeks, not days. We work exclusively with heritage Berkshire pork from small American family farms and never use fillers, artificial preservatives, or shortcuts.

The result is bold flavor, balanced texture, and salami made the way it has been for generations.

Where do you source your pork?

All of our pork comes from pasture-raised heritage Berkshire pigs sourced from small, sustainably managed U.S. farms. These animals are raised humanely without antibiotics, growth hormones, or GMOs.

Our spices and seasonings are selected for purity and flavor, with nothing artificial or unnecessary.

Do you use any fillers or preservatives?

No. We never use fillers, binders, or artificial preservatives.

Our salami is made with real meat, spices, salt, and naturally occurring nitrates from celery juice powder. We do not use synthetic nitrates or nitrites.

Is your salami shelf-stable?

Yes. Our salami is naturally fermented and dry-cured, making it shelf-stable when unopened.

No refrigeration is required until opened. Store unopened salami in a cool, dry place.

How should I store it after opening?

Once opened, wrap your salami in butcher paper or wax paper and store it in the refrigerator. Avoid plastic wrap, as it traps moisture and can affect texture and flavor.

How long does it last?

Unopened, our salami is shelf-stable for up to 12 months. Once opened, we recommend refrigerating and enjoying within 7 to 10 days for best quality.

How much does each salami weigh?

Each salami stick weighs 5 oz, the traditional artisan size, and makes about five servings.

During our multi-week dry-curing process, each salami naturally loses 30 to 40 percent of its original weight as moisture evaporates. What remains is concentrated flavor, richness, and texture packed into every stick.

Why does the size or texture vary slightly?

Our salami is made by hand in small batches without industrial shortcuts. Natural variation in appearance or texture is part of authentic artisanal curing and a sign that the product has not been factory standardized.

What casing do you use?

We use a natural beef fibrous casing during the curing process to help the salami dry evenly and maintain its shape.

The casing is removed before packaging, so your salami arrives ready to slice and enjoy with no peeling required.

We currently ship nationwide within the United States (excluding Hawaii, Alaska, and Puerto Rico).

How quickly do orders ship?

Orders typically ship within 48 hours of being placed. You will receive tracking information as soon as your order leaves our facility.

How long does shipping take?

Salami orders typically arrive in 3 to 4 business days after shipment via USPS. Shipping times may vary slightly by location.
