We Love Working with Local Farms to Create Amazing Charcuterie Products!
As an artisanal charcuterie producer, we pride ourselves in working with local farmers to turn their responsibly and sustainably raised Pork and Beef into delicious charcuterie products. In the picture above, Travis our Chef/Owner breaks down a beautiful pig from our friends at Short Creek Farm. We love collaborating with small farms like Short Creek and supporting the community by shopping and eating local! For this project, we transformed this pig into a spicy Mexican chorizo served on a kings Hawaiian roll with cotija, mezcal and mole pork belly tortas, smoked ham and gouda biscuits, and carnitas sliders.
